I did the same as Tim, built a low hanging rack from the ceiling to miss the GD. . Also a few 3' furring strips tacked across the strongback makes useful storage for the next few strips on each side of the hull.

striping tape
Get the 1/4 inch striping tape to mask the stem, then build it back using regular masking tape and paper.

oil finish
If you can find Watco natural exterior oil it's the goods. I mixed my own, tung, linseed and spirits. Alls you do is saturate a napless rag (like t shirt material) and rub it on. When that soaks in rub more on. Keep at it until the wood no longer soaks it up. Then buff any wet spots with a dry rag. ...

My recommendation is "Don't Do It" You are setting yourself up for headaches. Sanding and refinishing every year.

scuppers
I taped my inner gunnels together and ran both sets of scuppers at the same time on my drill press. Used a 1/2" forstner bit through the middle. A little touch up with a rat tail file and good to go.
