I'm sorry to say I think my canoe building days are over and not by my choice. I'd been having pain in my right wrist for a while and it got worse recently. I did staple to my stems and it did not cause issues for me. I will let you know that I got to a point where the staple did not have enough force to hold and I had to make a halo.

I ripped 3/4 x 7/8" ash strips from an 8' board and scarfed them together. the scarf joint is almost invisible if you use adjacent scripts. I took care to find a straight grain board

Lowes has ceder but its really not very good at all. I believe that, I started picking through the pile and finding the best boards I could from it. I used western red cedar from Lowes 1 x 4" x 12' was cheap. ~$100 bucks for enough to do the entire canoe. I spent several days cutting out knots/defects and scarfing the strips together to make 16' strips.

I used a Japanese "Shinto Saw Rasp" for shaping the stems. It takes off a lot of wood really quickly

Seat Question
I purchased seats from Eds Canoe and they came with a satin poly finish. The rest of the woodwork on the canoe is finished with Epifanes Varnish.
So I even attempt to do anything to refinish the seats? They are caned already and It would be touch to apply finish around the caning.

It's 100 degrees outside and I'm not done with my varnishing. It's expected to continue for another week. Do you think it'd be OK if I got up early when the temp is in the lower 70s and varnished it them before the hot part of the day? The Epifanes instruction was to do it below 85F. I'm wondering i...

Just make sure you glass the inside before you install the gunwales

I did not try to bevel the gunwales on my ranger and it looks good that way
