Hi Mike
I took a few pictures today at the museum that you might find of interest. One of the Royal Canoes is a Cedar Rib Canoe given to the Queen in 1948 I believe and that is the one I took several shots of today.

Perhaps a water based finish is what you are looking for. I have done white pine and red pine coffee tables in water based finishes and they stay pretty clear. The pine itself does amber a bit under the finish tho

face grain and hand tools

The third coat needs to be put on thick by brush if you only intend to put on one 3rd coat and not a 4th. of West system epoxy. I checked with a retired canoe builder over the Holidays and he tells me that he has seen one canoe built with butternut planking. crack filling
If I may offer a suggestion with regards to crack filling. I would suggest using masking tape on each side of area to be filled and peel it off when filling is done. It will make your cleanup much faster and less chance of missing a bit of overfill on the planking that you may not notice until you a...

I would suggest setting up your strongback on sawhorses and fastening it to them. When you are ready to move unscrew them and reattach outside.
