I'm tring to envision what you've described in your words... It sounds like the tips of your diamonds don't fall at the edges of your strips. It sounds like the tips die right smack dab in the heart of a strip, right? If that's the case, I would make those cuts on the bench and glue the strips toget...

I wouldn't eliminate the center station, you might consider using closer spacing between stations if you indeed do end up reducing your length.
My advice... Choose a different design, like a 15' Prospector or get in touch with Steve Killing about your proposal and get his thoughts.

I built my stems three times and all three sets were acceptable. I did change my mind after the first set and switched from basswood inners to ash inners. I only let mine dry on the form for one day, but then tied them in position with a rope and snugged them a bit tighter than the bend on the form ...
