I purchased seats from Eds Canoe and they came with a satin poly finish. The rest of the woodwork on the canoe is finished with Epifanes Varnish.
So I even attempt to do anything to refinish the seats? They are caned already and It would be touch to apply finish around the caning.

I'm guessing from your question that you want the finish on your seats to be glossy like your canoe.
I would try one of three things.
1.put the varnish on between the bits of cane using a pencil brush and then do the rest around the outside doing one rail at a time this way.
2.or try coating it all over including the cane and then wiping off the excess from the cane.with a dry cloth turning frequently.
3.or coat the cane too all over.
you didn't mention what type of cane it is as the finish will soak into real cane whereas it will come off more easily from plastic cane.
