Catch of the day

Post by mtpocket »

Directions:
Any kind of fish that you catch, cut into fillets. Set fillets in heavy duty foil which can be wrapped up. Add tablespoon of butter or olive oil, couple of tablespoons of white wine (optional), add juice from half a lemon, seasonings to taste (salt, pepper, and others such as dill, oregano, basil, red pepper, or what ever you like). Wrap completely closed in the foil and cook over(not directly on) hot coals for about 30 minutes.

Comments:
My wife has also added shrimp, scallops, onions, garlic, vegetables, mushrooms, etc.

Very simple ... tastes great and even my wife can cook it.
