Could anyone tell me if you should varnish the cane on hand caned seats?

If you are talking about artificial/synthetic cane, it doesn't need to be varnished.

But if you are talking about real cane, you should indeed varnish it. Thinned coats for penetration first leading to heavier coats per directions on the can.
