Fairing and filling gaps

Hello all,
First post so I hope I’m doing this right. My first build freedom 17, stripping went fine outer stems gave me fits. Question is sanding hull took fine edge of cove off in numerous spots. Epoxy mix leaves spots that won’t sand out. Seam where outer stem and planks meet could use a lot of filler to make smooth transition. How good does this need to be on my first build and not have problems. Thanks

Where do you live ?

I'm here in Northwest Iowa.
I'd be glad to personally help mentor you, if not too far away.
I just finished glassing the outside of my 30 something canoe.
