Do you plane the cove off the third last plank so the last two are butt jointed on both sides?

That is exactly correct, the last strip, you glue in, gets the cove planed off, then you are ready to fit the final bit.

I plane just the Top edge, or lip, of the cove of the Second to last strip.
It leaves a lip so the Last strip can be rounded on the bottom edge, a nestled inplace.
I wish I'd have taken pics of this. It would make more sense ! The lip on the second to last strip, insures no gap is visible !
I hate to see Day Light shine through my strips ! It's purely a visual thing, not necessary for structure !
It also depends on how small the Whiskey strip is.

I close up my hulls different than most. I stop a few strips short before cutting my Centerline.
This makes it easier to fit the last strips, and add a design if I want !
