Just pondering over the idea of using a round over bit on on inwales and outwales before I finish the canoe. I have already broken the edge with a spoke shave and sand paper... Just I little hesitant to take a power tool to it ie..tear out is a big fear.
Any ideas of how to get the best edge on the gunwales would be awesome!

I used a round over bit and it worked fine, just pay attention to the grain direction. If you are worried, you can sand the edges, but routing is a better shape IMO.

Before installing mine, I route the bottom inside edge of my gunnels, it's hard to do once installed.
After they are installed, I route both top edges.
If you are concerned about tearing up your gunnels, set your bit shallow, so it just takes a little with the first pass, then readjust a little until you are happy.
